About me

My name is Jaturong Nakajima. I am a chef with over 18 years of experience in Michelin-starred restaurants, fine dining establishments, and 5-star hotels. Today, my work is centered on handmade organic natto, miso, and fermentation—crafts that value time, balance, and careful attention to detail.


Philosophy

My approach is guided by respect for nature and ingredients. I use organic, locally sourced produce whenever possible and support small-scale farmers who share the same values. By working carefully and thoughtfully, I aim to create food that is nourishing, honest, and in harmony with a more sustainable way of eating.

Natto
納豆

Our natto is made from 100% organic soybeans and fermented naturally using traditional methods. Rice straw sourced from small local rice growers is used in the process, allowing time and nature to shape its character. Simple, honest natto—where quality and tradition remain.


Kome Miso
米味噌

Our kome miso is handcrafted using 100% organic soybeans, house-made jasmine rice koji, and organic sea salt. Each batch is naturally aged for at least 12 months, allowing the flavors to deepen and mature into a rich, balanced miso.


Kuro Miso
黒味噌

Our Kuro Miso, or black miso, is handcrafted from 100% organic black beans, house-made jasmine rice koji, and organic sea salt. Each batch is aged naturally for at least 12 months, resulting in a smooth miso with deep, earthy character and layered flavor.


Azuki Miso
アズキ味噌

Our Azuki Miso is handcrafted using 100% organic azuki beans, valued for their natural antioxidant content, along with house-made jasmine rice koji and organic Himalayan salt. Through patient aging of at least 12 months, allowing gentle sweetness, depth, and balance to develop over time.


Tempeh

Our Tempeh handcrafted from 100% organic soybeans and cultured with native Indonesian tempeh spore. Experience the rich flavors and nutritional benefits of this ancient Indonesian delicacy.
